Mainly derived from the Planifolia species, Blue Vanilla stands out both for its delicacy and softness, but also for its visual aspect which places it among the most beautiful vanilla.
Its cultivation and preparation are perfectly controlled. Thanks to an innovative preparation, and unlike a classic vanilla, blue vanilla is neither blanched nor dehydrated, which allows it to maintain its shape and its natural biological properties.

But most importantly, blue vanilla is designed to prevent waste: it’s completely edible, including its pod! It can be scrapped, infused, but also cut into thin pieces that can be enjoyed without any difficulty and will add an extra vanilla flavor to your dishes.

It is only after a minimum of 9 months that it will be harvested to allow the pods to reach full maturity, for an optimal aromatic potential. Then follows a long and meticulous maturation process, which will last about 2 years. In all, it will take more than 1500 hours of work to make 1 kilo of blue vanilla, a job 3 times longer and more intense than for a classic vanilla.

It should be noted, of course, that the vanilla itself can be stored for several years without deteriorating despite the SL which generally goes to 1 or 2 years.
Blue vanilla can be stored for several years in the classic way, that is, in an airtight glass jar, in a dry place, away from cold and heat. In case of unstable temperature (especially after transportation), if you notice a Slight condensation, Just clean the pods and the container.

We advise you to cut the pod into thin strips or thin pieces and incorporate them directly into your preparations. These can be eaten both raw and cooked. In the case of cooking, remember to retain the moisture of the pod by combining it with a sauce, cream, liquid …

The direct and dry cooking of the peel could dehydrate it and give a result similar to the classic vanilla peels, i.e. fibrous and more difficult to chew.

Since blue vanilla is alive and organic, a very simple trick is to take the pod out of its container and let it breathe in the open air for 10-15 minutes before use.
