Chinese badian, commonly known as star anise, is the fruit of Chinese star anise, a tropical tree introduced in Europe in the 17th century. Recognizable by its eight-pointed star shape, it can be used in many cooking dishes thanks to its intense fragrance. Fresh star anise is green. It is only with drying that it takes on its beautiful almost orange brown color.
Star anise also aromatizes desserts, especially pastries or biscuits, but also to flavor savory dishes. Star anise can also be used as an infusion, simply by infusing three stars in boiling water for a few minutes.
