chimichurri is an argentinian sauce made of parsley, oregano, garlic and chili pepper.
Very appreciated in all the countries of Latin America, it is used to flavor not only meat, but also fish, bruschetta and sandwiches, such as choripan!
According to the legend, the “father” of chimichurri is a certain Jimmy McCurry, an Irish soldier sympathetic to the cause of Argentine independence.
The sauce would become very successful and the name of its creator, difficult to pronounce for the local people, would be gradually mispronounced until it became chimichurri.
Our suggestion: 2 parts blend, 1 part vegetable oil, 1 part vinegar or lemon. Add a little warm water to help rehydrate the mixture. You can add chopped tomatoes or red peppers to taste. It is served cold.
