Persian blue salt is rare. The color comes from sylvite, a potassium mineral. It settled on the salt crystals under the pressure of the mountain rock and caused a shift in the salt crystal lattice. Normally the salt turns pink or yellow, only in rare cases it turns blue. Persian salt has an interesting flavor. At first it surprises with an extremely salty flavor, which then becomes spicy.
