Cranberries are particularly rich in vitamin B2, the vitamin involved in the breakdown of fatty acids, amino acids and proteins as well as in muscle healing processes. But if cranberries have become so popular, it is mainly because of the proanthocyanidins (PACs) they contain, which help reduce the attachment, on the walls of the urinary tract, of certain coliform bacteria often responsible for urinary tract infections. They belong to the class of superfoods.
The antioxidant capacity of cranberries is now unanimously recognized by the scientific community. After blueberries, it is the fruit with the best antioxidant activity, with values higher than those of many fruits such as apples, red grapes, strawberries, grapefruit and peaches.

Cranberries can be used in coulis, sauces, chutneys, or compotes. Enhance pancakes, fruit and vegetable salads, muesli, quark and yogurt. Very popular in the bakery.
