The Tonka bean, also called cumaru, is a seed contained in the fruit of the teak, a tree that grows in the Caribbean and South America (Brazil, Venezuela, Guyana). This wrinkled black seed is a spice with a powerful flavor of bitter almond, vanilla and tobacco.
The organic tonka bean is ideal for flavoring desserts or dishes (creams, pasta for cakes, mousses, purees ….) and to use it you have to grind or grate it at the last moment. Due to its strong taste, it is advisable to add just a pinch of tonka beans to your dishes.
