This fleur de sel appears only on hot and windy days as a very thin layer on the plateau and is skimmed by hand with a ladle. It does not come from the Spanish, African or French coast where large quantities are produced, but from India.
It is therefore the rarest and most precious fleur de sel in the world. Some gourmets appreciate its flavor, characterized by parts of calcium and magnesium sulphate not contained in the rock salt. It is also nicknamed the “Salt Pyramid” due to its structure of small pyramids.
This fleur de sel, much appreciated by cooks and gourmets, has a very fine note of salt and is particularly suitable as table salt.
