Amaranth is a plant native to Central America.
The main advantage of amaranth seeds is that they are rich in protein (15%), with all the essential amino acids. They also offer a very interesting mineral content, particularly calcium (4 times more than in wheat), iron (2 times more than in wheat), magnesium and zinc. It is an excellent source of B vitamins (including vitamin B9 or folic acid) and provides fiber (10%), with a very low fat content. Last but not least, amaranth does not contain gluten.

Amaranth is therefore perfect for athletes, vegetarians, people intolerant to gluten, pregnant women, and all those who control their caloric intake.

The seeds are very small and can be cooked for 20-30 minutes in twice their volume of water. The texture, a bit sticky, is not to everyone’s taste, so they can be used in gratins, pies, casseroles, etc. More fun: heat them in a pan with a lid to pop and make “popcorn”. Amaranth seeds have a slight nutty note and are ideal for sweet and spicy dishes. It can be served as a couscous, accompanied by seasonal vegetables, such as zucchini, broccoli, eggplant, cherry tomatoes, parsley, olives, various sauces
