The virtues of Argan oil are well known.

Very rich in oleic-linoleic fatty acids, this argan oil contains about 80% of unsaturated fatty acids such as olive oil. It has a distinct advantage over olive oil thanks to its richness in polyunsaturated fatty acids (34% linoleic and linolenic acid) and its vitamin E content is 10 times higher. The properties of argan oil are innumerable in cooking, in cosmetics or in medicine.

It is a very rare and precious oil because it requires a long time to work. The harvest is still manual today and, as a tradition, is carried out by Berber women, they remove the pulp so that only the core they crush remains. Difficult and delicate operation because it is not necessary to crush the almond that the kernel contains. The almonds are then slowly roasted before being crushed and pressed to extract an oil with a nutty flavor and the color of desert sand. Its incomparable taste is highly appreciated in the kitchen to enhance the flavor of dishes.

The artisanal extraction of a liter of oil requires 20 hours of work.

It is preferable to use it raw (without cooking). In Morocco, tradition has it that it is tasted on bread, to dress salads, soups, grilled vegetables, fish, tagines, couscous … Mixed with honey and almonds, it is made into amlou , a spread that is served for breakfast on pancakes or bread. But also ideally on your creamy desserts.
