Native to India, more precisely from the Malabar coast, cardamom is the seed of a perennial plant. Enclosed in its green pod, it has an inimitable, warm, peppery and slightly lemon flavor. This spice, widely used in oriental cuisine, is one of the most expensive in the world after saffron. A small amount is enough to flavor a dish or flavor a drink.
Cardamom aromatizes curries and marinades. It goes very well with fish or meat, in cooking juices. It enhances the simpler dishes: try the carrot puree with cardamom. Cardamom coffee is an Arab specialty and the small seed is consumed as a herbal tea. But cardamom isn’t just for savory dishes. It can be used in compotes, gingerbreads or cakes.
