The raw material for this palm sugar is the nectar of the Indonesian Arenga palm. Sugar juice is obtained from the inflorescences of the palm. The Arenga palm is valued for the high quality of its sugar juice and only grows in regions with a great diversity of plants and animals.
Farmers, who have joined forces to form a cooperative, are cultivating their own plantations in a region that once looked like a cut and burned lunar landscape. They deliver the juice to a modern and ecological factory where the juice is thickened. In a complex process, the sugar juice is transformed into palm sugar.
The special processing method and constant controls make this organic palm sugar a high quality product. Palm sugar has a slightly malty to caramel flavor and is great for sweetening foods and drinks.
For use on shrimp or cod, Thai or Indian curry, on chicken or in cured meats. Make a sugar syrup for canned fruit, coulis. It can be put in milk for example for a custard or in a fruit smoothie.
