White pepper is produced from ripe fruit of the pepper plant, orange or reddish in color. Berries are packed in linen bags and soaked in water for 8-10 days. The fruit pulp can then be removed. The peppercorn can be sun dried and bleached at the same time. White pepper is less aromatic than black pepper, but very spicy and therefore to be used in moderation.
It goes very well with fish, poultry, vegetables, rice and pasta, as well as with sauces and white soups.
White pepper, like all other peppers, must be incorporated at the end of cooking so that it can reveal all its aroma.
