Our organic Colombian rub is especially good for red and white meats; just sprinkle the spices over the meat and “dab” them on to make them stick well.
It is important to leave the dry marinated meat in the refrigerator long enough for the salt to penetrate the meat and take on all the flavor of the mixture. The ideal resting time would be overnight in the refrigerator to get a nice result.
If you cannot let the meat rest due to lack of time, we strongly recommend brushing it with a little oil before applying the mixture. This prevents the meat from drying out.
Our dough contains sugar (unrefined), which is very important for getting a nice crust, but be careful not to overcook it so it doesn’t burn.
For an American-style barbecue, put the coals on one side of the barbecue and the meat on the other (this is indirect cooking). In this way you can also use your oven.
