The taste of ajowan or Indian thyme, is found between thyme, oregano, cumin and fennel, this spice has a slightly citrus and peppery flavor with a hint of bitterness.

It must be dosed sparingly if you don’t want the flavor of this little seed to pervade the whole dish.

Although rubbing the seeds between your hands or quickly crushing them in a mortar can flavor your salads with it, ajowan is most often dry roasted or fried in a little fat. In this way it fully develops its subtle and complex aroma. Ideal with all starchy foods.

Ajowan seeds are also used to flavor vegetarian dishes. For example they can be added to a sauce that accompanies green vegetables. They can also be incorporated into marinades for fish or white meat. They will also condition the vinegar in your pickles.

This spice is widely used in traditional Ayurvedic medicine. It is believed to have virtues toward gastric disorders that help relieve stomach pain in cases of indigestion, bloating, flatulence, colic, diarrhea or abdominal pain. They are then most often simply chewed or consumed as herbal teas as is the case in Egypt after large meals.
