Colombia owes its name to the discoverer of America, Christopher Columbus. It was also Columbus who brought the first varieties of hot peppers to Europe. The fertile Amazon Basin of Colombia, one of the largest nature reserves in the world, is one of the regions of origin of the red pepper family. One of the most unique varieties of chilli owes its name to this river – the yellow pepper from the Amazon.

This hot pepper, with 50 – 70,000 on the Scoville scale, belongs to the hottest peppers, but not the extreme peppers. It convinces with a nice fruity note, a very clear spicy taste and a subtle acidity. It is no coincidence that this type of pepper recalls what is probably the most famous type of pepper, the famous Tabasco. Both varieties are related and belong to the Capsicum Frutescens group. The pale yellow color of the Amazonian pepper is particularly impressive, as it is harvested just before full ripeness. Thanks to a delicate drying process, the beautiful color and its fruity spiciness are preserved.

In cooking, Amazonian chili can be used in a number of ways. Sauces or soups, stews, soups, broths, meat dishes or sauces are waiting to be refined with a very spicy Colombian taste. Those who love it more discreetly, put the chilli pepper on their plates just before serving it. The longer the chili is cooked, the more the very spicy taste spreads. See the recipe …
