The pink berries are the fruits of Schinus terebinthifolius, native to Central America and belonging to the botanical family of Anacardiaceae. This family includes more than sixty plant species.
Pink berries are unfairly known as pink pepper or Bourbon pepper (they do not belong to the botanical family of Piperaceae). They have a lot of aroma and bring out the notes of resin and anise in your culinary recipes.
The pink berries are used as a spice to flavor fresh goat cheese, in a yogurt sauce or with marinated salmon. To do this, they are roughly crushed and scattered with small blows. Also used whole in fish marinades, salads, vegetables and soups.
