Rubs are actually dry marinades. Rub your meat with the mixture, as for a massage, and leave it to rest for an hour in the fridge, so that the spices penetrate and give a real flavor to the meat.
This rub is especially made for lamb, but is also suitable for other strong meats, grilled, baked or in a pan.
